Sunshine Morning Muesli

Ingredients:

  • ¼ cup Thoughtful rolled oats
  • ⅛ cup oat bran
  • 1 tablespoon golden raisins
  • 3 dried apricots, chopped
  • 1 pinch ground cinnamon
  • ½ cup plain yogurt
  • ¼ cup milk, or as needed
  • 1 teaspoon chopped walnuts

Directions:

  1. In a medium bowl, mix together the oats, oat bran, raisins, apricots, and cinnamon. Stir in yogurt, cover, and refrigerate overnight.
  2. In the morning, pour the milk over the muesli, and sprinkle with walnuts. You may wish to add more milk depending on your preference.

Swiss Oatmeal

Ingredients:

  • 2 cups of Thoughtful rolled oats
  • 1 green apple, chopped
  • 1 cup 2% milk
  • 1 cup nonfat plain yogurt
  • 1 banana, chopped
  • ¼ cup raisins
  • 1 tablespoon chopped walnuts
  • 1 tablespoon slivered almonds
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 tablespoon orange juice

Directions:

  1. Mix apple & cinnamon oats, milk, yogurt, banana, raisins, walnuts, almonds, brown sugar, honey, and orange juice together in a bowl. Chill in refrigerator for at least 1 hour to set.

Vegan Muesli

Ingredients:

  • 2 cups Thoughtful rolled oats
  • 1 ½ (14 ounce) cans coconut milk, or more to taste
  • 3 tablespoons chia seeds
  • 2 Granny Smith apples, peeled and grated
  • ½ lemon, juiced
  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 2 tablespoons maple syrup, or to taste

Directions:

  1. Mix oats, coconut milk, and chia seeds together in a bowl.
  2. Toss apples and lemon juice together in a bowl until coated; fold into oat mixture. Stir strawberries, blueberries, and maple syrup into oat mixture. Refrigerate for 8 hours to overnight.

Healthy Muesli Recipe

Ingredients:

  • 3 cups rolled oats use certified gluten-free if needed
  • 1/2 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup chia seeds
  • 1/3 cup goji berries
  • 1/3 cup coconut chips or shredded coconut
  • 1/4 cup cranberries or barberries
  • 1/4 cup dried apricots 8-9 of them
  • 1 tsp ground cinnamon powder

Directions:

  1. Chop the almonds and apricots into smaller pieces.

FOR TOASTED MUESLI:

  • You can toast some or all of the elements within the blend. I prefer to only toast the nuts, seeds, and grains though. To do this, spread them in a single layer over a large baking tray and toast in the oven for 10-15 minutes at 325ºF/160ºC, until lightly golden and aromatic.

    Nuts can take less time – 7-8 minutes, though I just chuck everything in together to save time and it always works well. Once toasted, allow to cool and then mix with the remaining ingredients.
