Veggie Packed Quinoa Bowl

Ingredients:

  • Broccoli
  • Sweet potatoes
  • Zucchini
  • Fresh Edamame
  • Cherry and pearl tomatoes
  • Quinoa

Instructions:

1. Cook quinoa according to package instructions.

2. Roast broccoli, zucchini, and sweet potatoes in olive oil until tender.

3. Steam fresh edamame and cut cherry tomatoes in half.

4. Assemble your bowl by layering quinoa at the bottom, followed by the roasted vegetables, fresh edamame, and cherry tomatoes.

5. Drizzle with your favorite vinaigrette or a light dressing of olive oil, and season with salt and pepper to taste.
