Rainbow Stir fry with tofu
super easy
Ingredients:
- Broccoli
- Zucchini
- Sweet potatoes varieties
- Fresh Edamame
- Cherry and pearl tomatoes
- Extra-firm tofu
- Soy sauce
- Sesame oil
- Garlic and ginger (minced)
Instructions:
1. Press and cube extra-firm tofu, then stir-fry until golden brown.
2. In the same pan, stir-fry broccoli, zucchini, sweet potatoes, and fresh edamame until crisp-tender.
3. Add minced garlic and ginger to the vegetables, sauté for a minute.
4. Toss in cherry and pearl tomatoes until they slightly blister.
5. Combine tofu and vegetables in the pan, then add soy sauce and a dash of sesame oil for flavor.
6. Serve over brown rice or noodles for a delicious ¢ and colorful stir-fry.
