This 3-ingredient butternut squash soup is a comforting and healthy dish that’s both easy to prepare and adaptable to various cooking methods

Ingredients:

  • 1 large butternut squash, peeled and cubed
  • 3-4 cups low-sodium vegetable broth
  • 1¼ teaspoons ground cinnamon

Instructions:

1. Prepare the Butternut Squash:

Peel the butternut squash, remove the seeds, and cut it into ½ to 1-inch cubes.

2. Cook the Soup:

Stovetop Method: In a large pot, combine the butternut squash cubes, 3 cups of vegetable broth, and cinnamon. Cover and bring to a boil over high heat. Once boiling, reduce heat to low, slightly uncover the pot to prevent boiling over, and simmer for about 20 minutes, until the squash is tender.

Instant Pot Method: Add the butternut squash, broth, and cinnamon to the Instant Pot. Seal the lid and cook on high pressure for 7 minutes. Quick-release the pressure once cooking is complete.

Slow Cooker Method: Combine all ingredients in the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours, until the squash is soft.

3. Blend the Soup:

Once the squash is tender, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.

If a thinner consistency is desired, add additional vegetable broth and blend to combine.

4. Serve:

Ladle the soup into bowls and enjoy as is, or garnish with your choice of toppings.
